Observation (CORRECTED DURING INSPECTION): Magnetic knife holder used to hold clean knives was observed to be dirty.
Corrective Action(s): Clean and sanitize knives and knife holder. Ensure only clean knives are stored on this knife holder.

Observation: Some food items stored in walk-in cooler and in prep coolers were uncovered.
Corrective Action(s): Ensure all food items are stored properly covered with tight-fitting lids/food-grade wrap to protect from contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Small dry ingredient storage/mixer room requires deep cleaning - old food debris/flour caked on to ingredient storage bins, floors, counter, etc.
2) Floor of larger dry storage room requires cleaning - minor spillage of dry ingredients observed.
Corrective Action(s): Clean and sanitize all areas noted above. Ensure to keep storage rooms well organized.

Comments

- Hand washing sink was properly supplied with hot and cold running water, liquid soap, and paper towels
- High-temperature dishwasher reached 75C at the dish surface during sanitizing rinse cycle - good.
- Quats sanitizer solution available in labelled spray bottle at 200 ppm.
- Walk-in cooler, prep coolers, sweets display cooler, and beverage cooler measured to be at 4C or colder.
- All freezers were measured to be at -18C or colder.
- Walk-in cooler was organized, however, ensure all food items are stored properly covered.
- Ventilation canopy maintained in sanitary condition
- All food items were stored off the floor in the larger dry storage room - good.
- Garbage bags no longer being used to cover food and food-related items. Good.
- Staff were not able to locate pest control reports at time of inspection - Email pest control reports to Ying.Tan3@fraserhealth.ca for health inspector to review.

A follow-up inspection is required.
