- All freezers at -18'C or below.
- Quats sanitizer present in spray bottles at 200ppm.
- Low temp mechanical dishwasher with chlorine sanitizer present at >50ppm after final rinse.
- Hot holding units operating at 60'C or above.
- General sanitation satisfactory at time of inspection, except ensure to clean ceilings.
- No activity of pest observed at time of inspection.
- Handwashing stations stocked with soap, paper towels, hot and cold running water.
