Routine inspection conducted with the presence of the ASM.

- General sanitation was satisfactory.
- All coolers in prep area and retail area 4 C or below.
- Freezer at -18 C or less.
- Hot holding soup and chicken held in cases above 60 C.
- Separated raw from ready-to-eat food. Food items properly covered.
- Sushi rice pH measured at 4.6.
- Thermometers available in each temperature controlled units.
- Hand sinks fully equipped with hot and cold running water, liquid soap and paper towels, easily accessible.
- Vinyl gloves available.
- Quats sanitizer in dispensing units and spray bottles all tested 200 ppm.
- Staff indicated meat slicer was cleaned and sanitized every 2 hours.
- No signs of pest activity.

Note: Keep the food containers in its original bags to prevent contamination.
