Observation: Cold running water was not in contact with all frozen foods in the prep sink.
Corrective Action(s): Thaw frozen food in the prep sink by filling it with cold water and routinely changing out the water. This ensures proper thawing of all frozen foods.

Observation: Live cockroaches observed underneath the two compartment sink (bar) and adjacent cabinets. The professional pest control professional conducted inspection on March 22, 2023, as per summary report. Only rodent controls were noted. No sticky glue boards or traps observed throughout the kitchen.
Corrective Action(s): Call the pest control professional. An assessment must be conducted specific for cockroaches and implement control measures.

Observation: Condiment bar:
- Chopped green onions stored at room temperature.
- Chopped cilantro stored at room temperature.

Bar:
- Cooked tapioca pearls stored at 35C in the warmer. No time stamps or time tracking logs.

Kitchen:
- Multiple bags of frozen fish balls stored at room temperature.
- Multiple frozen tofu stored at room temperature.
Correction: Discard all food items noted above. All cold potentially hazardous food items must be stored at < or = 4C.
- Time stamps or time tracking logs required to keep cooked tapioca pearls at room temperature for max 4 hours.

Follow up inspection to report #DSOG-CPZUQ4:

- All perishable condiments stored over ice at the condiment bar.
- Tapioca pearls are now being time tracked using a time log. Temperature tracking log must be available for review by the health inspector at all times.
- No fish balls stored at room temperature.
- Main handwashing station used only for handwashing.
- Separation of frozen seafood and vegetables.
- Working thermometer inside the middle undercounter cooler.
- Excessive water underneath the cabinets has been removed.
