Observation (CORRECTED DURING INSPECTION): At the time of inspection no approved food contact surface sanitizer available for use in food preparation area.
Corrective Action(s): Ensure during operation a 200ppm quats or 100ppm bleach sanitizer solution is available for use. This is as per your sanitation plan.

Observation: Fruit flies observed around 3 compartment sink. Some pooling water observed under the left side of the 3 compartment sink.
Corrective Action(s): Contact a pest control company to address the fruit fly issue. Eliminate all potential food sources, clean up spills quickly, eliminate any pooling/standing water, clean and sanitize all food contact surfaces on a frequent basis. Correct immediately.

Permit to operate posted in front area.
Front and back hand sinks provided with liquid soap and paper towels.
After correction 200ppm quats available for use in labeled spray bottle.
200ppm quats dispensed from the chemical dispensing station at the 3 compartment sink.
Preparation cooler inserts and lower section at or below 4 degrees C.
Under the counter cooler for sauces at or below 4 degrees C.
Sliding glass door cooler at or below 4 degrees C.
Walk in cooler at 2 degrees C.
