302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Dishwasher measured 0ppm chlorine in 2 runs.
Empty sanitizer container was changed out to full one during the inspection.
Two more runs showed 0ppm Chlorine; tube line of sanitizer had long gap of air.
Final run (5th) of dishwasher showed 50-100ppm chlorine.
Some build up of food debris continues to circle inside the dishwasher, even after the 5th run.

2. Operator said that 3 compartment sink was used for sanitizing. Sanitizing sink had dirty dishes. Both side counters of 3 compartment sink had food debris. No one way flow from dirty to clean.
Corrective Action(s): 1. Issue has been corrected during the inspection.
Further actions to take: clean out the screen of the dishwasher, remove food debris.
Ensure dishwasher is adequately draining. (Immediately)
Ensure staff are aware to check sanitizer levels before using the dishwasher.
Use test strips available on site.

2. Ensure there is one way flow of dishes from dirty to clean to clean drying area.
Ensure the sanitizing sink is kept clean before doing dishes (Immediately).
Clearly re-label the flow for 3-compartment sink.

Food Handler Hygiene
-Hand wash stations are fully supplied with hot and cold running water, liquid soap and paper towels in dispensers
-Operators had clean clothing for food preparation
-Staff and Public washrooms appear clean and are fully supplied for hand hygiene

Food Safety
-Food in cold holding Coolers are below 4C
-Bags for holding food items (pizza bags) appear to be in clean condition and good repair - Operator mentioned that these are sanitized routinely with 200ppm Quats.
-Approved Food Source - food ingredients from an approved source
-Food is stored in covered containers; food storage is organized in coolers to prevent contamination

Maintenance and Sanitation
-Sanitizer bottles/buckets - have 200ppm Quats (400ppm measured)
-Storage of chemicals is separate and away from food
-Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
-Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
