Observation (CORRECTED DURING INSPECTION): Observed food equipment such as rice holder still has rice on the lid and inside the pot although manager said it has been cleaned.
Corrective Action(s): Reclean rice holder. Always properly clean and sanitize the food equipment and utensils before putting them away to dry.

Observation: Premises observed to have 46 seats. Condition on the compliance meeting letter indicates that premises must remain at 40 seats until further notice.

Prep cooler no long leaking water and is still maintained at <4C.
->more cleaning required inside as indicated to kitchen manager
Mayonnaise scoop with handle obtained and will be washed and sanitized after each use
Frozen fish remain in boxes and not in garbage bags in the back.
->more cleaning required in the frozen fish freezer
Paper towels are supposed to be used in replacement of vapourize paper to soak up water in the back produce cooler. No pooling of water on the ground and cooler temperature is maintained.
Exhaust hood recleaned and appears improved although grease build up is apparent. Please have professional company service so these build up can be removed properly.
->side of deep fryer requires more cleaning
Soy sauce like spill noted on the floor by flour rack in the kitchen
->this area has not been properly cleaned and needs to be recleaned
Rice storage room increase fruit flies
->all items placed here must be properly cleaned (rice still noted in cleaned rice cooker, oil around food storage containers etc, floor around hot water tank etc.)
-->Sushi bar wall still needs more cleaning as grease is still apparent in reachable area.
Back door closed but note that it requires more force to ensure full closure; remind all staffs.
