Observation (CORRECTED DURING INSPECTION): Raw chicken stored directly next to ready-to-eat sauces in walk-in cooler and above fish.
Corrective Action(s): Raw chicken was moved to the bottom shelf of the walk-in cooler at time of inspection. Ensure that all raw foods are stored separately and underneath cooked and ready-to-eat foods to avoid cross-contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed along perimeter of wall along equipment storage space.
Corrective Action(s): Remove rodent droppings with a 1:10 dilution of bleach, wipe with a single-use paper towel, and discard into a double-bagged garbage receptacle. Remove shelving to access the flooring. Continue to work with your professional pest control company to monitor for pest activity.

Observation: Ventilation slats are saturated with grease, especially areas above the deep fryers.
Corrective Action(s): Remove the slats, degrease, and thoroughly clean the slats to ensure that they remain in sanitary condition.

Comments

Routine inspection conducted. Facility is generally in satisfactory sanitary condition. The following observations were made:

1. Temperatures
- Walk-in cooler at 2C
- Walk-in freezer at -20C
- Domestic stand-up coolers at 4C
- Domestic freezer unit at -18C
- Beverage cooler / tartar sauce display cooler at 4C
- Cooler units equipped with accurate thermometers

2. Hygiene and Sanitizing
- Handwash station in washroom and kitchen area adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizing pail contains 200 ppm chlorine residual
- Utensils and cutting boards, knives generally maintained in satisfactory sanitary condition
- 2-compartment sink used for warewashing is shared with handwash basin
- Washroom facility is maintained in good sanitary condition

3. Storage
- All food items stored off the floor and covered
- Dry storage items inside containers with tight-fitting lids

4. Administrative
- Operator has FoodSafe 1
- Permit posted

5. Pests
- Facility contracts professional pest control company to conduct monthly audits
- Back screen door is securely shut

Recommendations:
- Organize back dry storage area and keep all pre-packaged containers well off the floor. Ensure that they are all sealed to protect contents from contamination. Any packages that have been punctured must be discarded

NOTE: Restaurant will move to building across existing facility later this year. Please contact the Environmental Health Officer for floor plan approval PRIOR to any construction.
