Observation (CORRECTED DURING INSPECTION): - 3 chicken donair rods observed displayed on the hot holding broiler at the service area. Only 1 donair under broiling proccess and turn the hot holding lights on. Operator stated chicken displayed for less than an hour.
Corrective Action(s): - Please keep the broiling process on and turn the hot holding lights on all the time to make sure food is safe to storage, cook and serve.

Observation: - Grease built up on the commercial ventilation hood. service was scheduled on Sep.30, 2022, however, no service has been done.
- Magnetic strip for knives by the side of the hand sink was not in a sanitary condition.
- Fan guard in the walk in cooler has dust built up.
- Fan guard of the electric fan used in the service area has dust built up.

Comments

Routine inspection conducted with the presence of 2 food operators.

- General sanitation was satisfactory.
- Hand sinks at the back and at the front were fully equipped with hand soap, paper towel and hot/cold running water.
- Bleach solution in the sink and in the container tested 100ppm.
- Walk in cooler 1.4C; Upright produce cooler at the back 4.8C. Upright freezer -18.2C. Prep cooler under the counter -1.2~ 4.0C;
- 3 Steamer hot holding cases and cooked rice were all measured above 60C- Excellent!
- Single use utensils in the black containers kept the handles up and prevent contamination- Good!
- No sign of pest activity observed during inspection.
- The floor underneath the shelving units and the equipment was in a sanitary condition.
