Observation: The following was observed during this inspection:
1. All sanitizer buckets were at 0ppm concentration during time of inspection.
2. Dishwasher found at 0ppm concentration.
Corrective Action(s): The following was completed during this inspection:
1. Operator replaced all sanitizers with new bleach water and concentrations were at 100ppm concentration.
ENSURE ALL SANITIZER BUCKETS ARE BEING CHANGED ON FREQUENT BASIS. **This was corrected during inspection**
2. Dishwasher repairman was called during time of inspection. Dishwasher must reach 50ppm concentration.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. All handwashing stations were missing paper towels or paper towel dispensers were not working properly.
Corrective Action(s): All paper towel dispensers must repaired immediately.

209 - Food not protected from contamination [s. 12(a)]
Observation: Sweet trays in storage area in the back are not covered. All foods are open to contamination.
Corrective Action(s): Cover all trays and food items. Transfer all dry food items into containers with tightly closing lids.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Back kitchen area where sweets are now being prepared/cooked needs to be reorganized and cleaned thoroughly.
Corrective Action(s): Reorganize back area and clean thoroughly. All open bags of ingredients must be transferred to containers with lids.
Ensure all chemicals are being stored separately.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Handwashing station in back prep area has hot/cold running water but the handles are missing on the faucet.
Corrective Action(s): Repair immediately.

Comments

Routine inspection.
All coolers at 4c or below.
All freezers at -18c.
Foods are being stored off the floor.
Employees observed to be wearing proper protective wear (hair restraints, aprons etc)
Pest control is in place.
No evidence of pest activity noted during time of inspection.

The following requires operators attention;
1. see above noted violations
2. Ensure all employees are routinely washing their hands. Handwashing station in kitchen prep area was blocked during inspection by mop buckets. This was corrected during inspection and mop buckets were removed.
