Comments

Follow up to Rpt # MBEK-BFNVDC.

- Low temperature dishwasher measured at 44 degrees C and 50 to 100 ppm chlorine in rinse residual at utensil surface.
- Bleach water sanitizer available in labeled buckets with wiping cloths and in labeled spray bottle at 200 ppm chlorine. Quaternary ammonium compounds (quats) sanitizer dispenser not in use. Note: If bleach water (chlorine) sanitizer is to be used instead of quats sanitizer for food contact surfaces (e.g. counters, cutting boards), ensure quats dispenser is removed or placed out of order to prevent it from being used as it is not dispensing sanitizer at the correct concentration.
- Hand washing sinks supplied with hot and cold running water, liquid hand soap, and single use paper towels. Note: Delivery had arrived at time of inspection and boxes on the ground were partially blocking access to rear area hand sink--boxes moved at time of inspection. Ensure all hand sinks remain easily accessible at all times. No boxes or items were observed on or within hand sink basin.
Follow up inspection to be conducted.
