205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Top layer of foods stored in inserts of sandwich prep cooler had surface temperatures ranging in between 9.4-11'C. Below had 7~8'C. No issues observed from temperatures recorded ~1hr prior to the inspection. Manager had advised the door was kept open during lunch rush, filled ice under the inserts and closed the door at this time.
Corrective Action(s): Do not place food over the limit lines of the inserts even during lunch rush and keep the door closed. Ensure the measured temperatures are at or below 4'C/40'F during the next temperature monitoring at 1:00pm, and if not call for service.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Several buckets had 400ppm QUAT. It turned out to be all the new, freshly filled buckets had 400ppm.
Corrective Action(s): Until the dispenser is repaired, ensure all buckets are filled with 200ppm by manually diluting and checking with test strip available on site.

Observation: Ice scoop stored directly above ice machine. Stirrer stored in stagnant water.
Corrective Action(s): Ensure the ice scoop is stored in a sanitized bucket, to avoid from contamination. Stirrer should be stored in ice, same as other utensils stored in ice observed at this time.

Observation: Automated QUAT dispenser dispensing 400ppm QUAT at this time.
Corrective Action(s): Ensure the dispenser is repaired/reset to dispense 200ppm QUAT. Contact the health inspector once repaired.

Routine inspection conducted:
-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory; Hot-holding temperatures satisfactory.
-Temperature monitoring system in place. Records maintained.
-High temperature dishwasher achieved 74.8'C at the plate level after final rinse.
-Ice machine maintained in sanitary condition.
-General food storage practice satisfactory. Dry storage area satisfactory.
-Professional pest control company contracted for monthly visit. No evidence of pest activity observed.
-Washroom handsinks satisfactory.
-Facility maintained in sanitary condition.
NOTE: Door seal for the small cooler by the office requires replacement. Currently not affecting the temperature of the unit. Already on order. Good.

Please contact the health inspector to notify, once the QUAT dispenser is repaired.
