Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles had 200ppm strength; bleach sanitizer is cloth buckets had [Cl2] of 200ppm; and hydrogen peroxide disinfectant had strength og 3500ppm. Test strips present.
- 3-comp sink used for manual dishwashing.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves, racks or pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Improvement seen in this areas. Deep cleaning of all surfaces are being done on a regular basis.
- Exhaust canopies were professionally cleaned and service this month. Next service and cleaning due in February 2024, as per service sticker.
- A few fruit/drain flies observed. Monthly monitoring by a professional pest company is being done.
- All external doors have door sweeps installed on the base of the doors.
- Valid FoodSafe certified staff present, or staff possesses an equivalent recognized certificate.

ACTION
- Clean the accumulated debris on the waste pipes, below the hand sinks in the drive-thru and front ordering area. This will eliminate conditions that encourage flies to breed in.
- Determine if the waste pipe for the hand washing sink, in the front ordering area, is leaking as there is debris accumulated on the wastes pipes on in the cupboard under the hand washing sink. If there is a leak, have the waste pipe repaired or replaced so it no longer leaks.
- Food stains observed on walls behind & below counter tops, shelves and equipment in food preparation areas. Ensure these hard to reach areas are being cleaned on a regular basis.
