Observation: Pest proof bins containing various dry goods in the production room were left uncovered, lids open after use.
Corrective Action(s): Cover all pest proof bins to prevent contamination. Close all lids immediately after use.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): In production area, packages of mashed avocado thawing in 2 compartment sink was submerged in warm water (22.9C) with surface temperature of 26C. Staff on site explained the usual process is to submerge in warm water, replacing the water approixmately every hour.
Corrective Action(s): This thawing procedure is incorrect, do not continue this practice. All frozen foods must defrost under 4C either stored in the cooler overnight, or under COLD running water until the product is ready for use. Please plan time for adequate defrosting.

Observation: Droppings noted in the following areas:
> Warehouse: along the perimeter of the room.
> Packaging room: in handwashing room next to hot water tank, and in equipment room under 2 compartment sink.
Corrective Action(s): Remove droppings, followed by cleaning and sanitizing the area.

Facility does production, repackaging, distribution of non-perishables, dry goods and snacks.

Walk-in cooler: 0C
Sanitizer on site: PAA67 100-300ppm, peracetic acid based no rinse solution. Facility has a titration kit used to verify the concentration, results are logged.
Handsinks supplied with hot+cold water, liquid soap and paper towels.
Hair restraints worn by all staff in production and repackaging areas.
General sanitation good - except for above mentioned areas.
Pest control on site weekly, provided by Abell.
HACCP plan undergoes review every year - next review will take place April 2022.
