Comments

General sanitation of the kitchen and bar is good.
Do not use plastic portion cups for scooping sauce to avoid hand contamination. Use a spoon or ladle that has a handle.
Ensure test strips are available for staff to check the sanitizer of the bar glass washer at the beginning of each day.
Ensure that the meat slicer is taken apart for cleaning.
