Operator closed the back door at the time of inspection. Ensure both the back entrance and the loading bay door for the processing area is closed at all times to prevent potential entrance of pests. - Handwashing station supplied with hot/cold running water, single use paper towels, and liquid hand soap - Processing area is temperature controlled - Drums, coating machine, and chocolate pot are cleaned and sanitized through CIP method - Metal detector in place at final packaging stage - Operator was able to communicate proper manual dishwashing practices at the 3 compartment sink - Sanitizer available at 200 ppm QUATs - Food stored at least 6" from floor level - Hair nets, shoe covers, and white coats are used in processing area - Adequate lighting present in processing area - General sanitation satisfactory - No sign of pests - Premise serviced by pest control company Abell on a bi-weekly basis - Premise HACCP certified and inspected by CFIA NOTE: Ensure to patch any cracks or holes in the ground to remove any tripping hazards.
