Observation (CORRECTED DURING INSPECTION): Manual slicer was found to have food debris on the blade and arm.
Corrective Action(s): Ensure equipment is properly cleaned and sanitized after each use to prevent potential cross contamination. Slicer was washed and sanitized at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -20C.
-Sandwich prep cooler was at 4C (top and bottom).
-Under counter cooler was at 4C.
-Counter top cooler was at 4C.
-Milk dispensers were at 4C.
-Eggs are stored at ambient temperature during peak periods and discarded after one hour.
-Hot holding was greater than 60C. Foods are cooked to greater than 74C prior to hot holding.
-Temperatures checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Quats sanitizer dispenser and pails were at 200ppm. Sanitizer pails labelled and changed every 2 hours.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice Capp wands sanitized in 200ppm Quats sanitizer after each use. Sanitizer was tested at 200ppm and changed every 2 hours.
-Tomato slicer was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator every 3 months. Pest control reports indicated no pest activity indicated on April 2022 report. Minor reports of ants and drain flies in December/January.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 equivalent valid until September 26. 2026.
