Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: 1) Bison meat found stored out at room temperature on counter across from sandwich line cooler (next to hand wash station) and was 17C internally. Staff did not know how long it was out for or why it was there. Product voluntarily discarded
2) Walk in cooler at 9C (48F) with hams stored inside (no other potentially hazardous foods stored inside). Staff stated it was not working yesterday and a technician has been called.
Correction: 1) Store all meats and other potentially hazardous foods at or below 40F or at or above 140F. Do not store food at room temperature unless they are in active use or are cooling and being monitored closely.
2) Do not store any potentially hazardous foods in the walk in cooler until repaired and it can maintain proper temperature (40F or less) at all times. Due: Jan 10, 2022

√ No potentially hazardous foods out at room temperature. reviewed cooling with staff, ice bath method used with small containers.
√ One staff on site with FoodSafe however no other staff trained. Train more staff in the event that the one trained staff is not available.
