-Follow-up inspection to August 04., 2020.
-Time tracking is now used for potentially hazardous foods in the hot holding cabinet. Operator has obtained a prober thermometer to verify hot holding temperatures (comments are detailed on whether product is sold or discarded). Operator has also obtained a probe thermometer to verify hold holding temperatures. Temperatures are checked every hour. If hot potentially hazardous foods drop below 60C, they can be stored at that temperature for 2 hours, after which the product must be sold or discarded.
-Hot dog was hot holding at greater than 60C.
-Sanitizer spray bottle labelled. Ensure containers are relabelled as needed.
-Health Permit hand delivered to operator. Ensure permit is posted in a visible location.
