Observation (CORRECTED DURING INSPECTION): 1. Meat slicer's sharpening guard accumulated a small amount of dried food debris. A staff initiated cleaning process.
2. QUATs sanitizer bottle in the cook line was empty. The bottle was replenished at this time.

Observation: Equipment not maintained in sanitary condition. Ice machine interior observed with a build up of black debris. Clean and remove ice from machine to protect ice from contamination.

Observation: Meat slicer observed to have a built-up of food debris along the top guard and blade.
Correction: Clean and sanitize the meat slicer to remove all built-up food debris. Corrected by: Immediately.
Comments

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less.
All freezers measured at -18C or less.
Foods held in ice bucket is time tracked for 4 hours use.
General sanitation is adequate.
No sign of recent pest activity noted at this time. Routine pest control service in place.
Kitchen ventilation hoods in sanitary condition. Next cleaning due April 05, 2022.
Cooling process reviewed - satisfactory.
Mechanical dishwasher's sanitizing cycle measured at 50 ppm on the plate level (uses both high temperature and chlorine).
Glass washer measured at 12.5 ppm iodine.
Ice machine in sanitary condition.
