Observation (CORRECTED DURING INSPECTION): Observations: 1) In-use cutting board only cleaned once per day
2) Spray nozzle for sanitizer bottle broken and sanitizer inside
measured less than 50 ppm quats. Spray bottle was used for prep counter
for cutting vegetables
Corrective Action(s): Corrections : 1) Clean in-use cutting boards and utensils at least
every 4 hours to prevent pathogen growth and food debris buildup
2) Spray nozzle was replaced with working one. Spray bottle was
refilled with new sanitizer which measured approximately 200ppm quats
Ensure that sanitizer is available for use at all times during food prep

- Other sanitizer spray bottles measured approximately 200ppm quats
At the dispenser sanitizer measured approximately 400ppm quats
- All other handsinks supplied with hot + cold water, liquid soap, paper towel
- Low temperature dishwasher measured approximately 100ppm chlorine
- Staff are foodsafe equivalent certified, validity verified
