302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Staff was not able to describe proper dishwashing procedures. The sanitizer spray bottle did not have any detectable bleach solution. Test strips have expired.
Corrective Action(s): Signage provided. Dishes must be washed with soap in the 1st sink, rinsed with clean water in the 2nd sink and soaked in 100-200ppm bleach solution in the 3rd sink for at least 2 minutes before airdrying. DO NOT RINSE DISHES WITH WATER AFTER SOAKING IN BLEACH. YOU CAN SWITCH TO QUATS IF BLEACH IS LEAVING STAINS ON THE DISHES. Purchase new test strips for testing solution.

Observation: 1) Opened can of olives noted in the walk-in cooler in it's orginal container.

2) Rice and bean spoons were stored in water.
Corrective Action(s): 1) Once opened, remove foods from cans and store them in a foodgrade container.

2) Always store spoons in ice water or a clean empty container.

Observation: Temperature records are not being maintained.
Corrective Action(s): Start recording your hotholding and cooler temperatures DAILY.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings noted behind the hot water tank, both chest freezers and some on the counter where the takeout containers are stored in the FOH.
Corrective Action(s): Clean all droppings using a bleach solution. As discussed, store the takeout containers inside the bags and slide the bag down during the day. Close up the bags at the end of the day.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The pipe under the hand sink in the back kitchen is leaking again. This is a recurring issue.

2) The 2nd hot water tap does not turn on at the 3-compartment sink.

3) There is a strong sewer odor in the kitchen.
Corrective Action(s): 1) Get the pipe repaired.

2) Get this repaired. Both taps at this sink must be operational.

3) Get the grease trap serviced. Address the odor issue.

Observation: There was only one employee working and they did not have Foodsafe level 1 or equivalent certification.

Comments

General Comments:
Coolers are below 4 degC. KEEP INSERTS IN THE PREP COOLER ONLY HALF FULL TO ENSURE ADEQUATE TEMPERATURES ARE MET.
Both freezers in the back kitchen are about -10 degC. Foods inside were frozen to the touch.
Front handsink is fully equipped; washroom handsink is fully equipped.
Rice temperature is 69 degC; meats are hotheld above 60 degC; beans are at 61 degC
Meats are sliced off then grilled (secondary cook step) before being placed in the warmer.
A pest control company is on contract. Report from February reviewed.
Exhaust hood has been serviced. Next service date is in July.
