- Manual Dishwashing: 4 Step Method. Sign posted. Ensure all food contact surfaces are being washed and disinfected after use.
-> Wiping cloth storage: Limit the number of cloths/cloth buckets being utilized. Cloths are to be kept completely submerged in the sanitizer at all times.
- Food Storage: Srtorage Room is to be kept clean and organized. All items are to be stored up off of floors.
- Chemical storage: Ok.
- Sanitary Facilities: Acceptable.
- Staff hygiene: Discussed.
- Sanitation: Facility is to be kept clean and organized at all times. Cleaning behind/under equipment and storage shelves is required on a routine basis.
