Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Staff informed that chocolate trays are dried with towels. 2) No bleach sanitizer premixed onsite.
Correction: 1) Drying rack needs to be obtained for proper air drying, do no use towels to dry as it can recontaminate the surface. Two compartment warewashing FHA sign provided to operator. Use new disposable paper towel to dry items for now. 2) Staff obtained new spray bottle to mix onsite. Ensure there is always 100ppm bleach sanitizer readily available in the labelled spray bottle for food contact surfaces. Recommend chlorine test strips to be obtained to check sanitizer strength. 1 tsp bleach to 1 litre water makes 100ppm.
