Observation: Full large inserts of left over hot food is covered with plastic wrap and tin foil have been placed in walk in freezer for cooling
Corrective Action(s): Ensure proper rapid cooling methods are used before food is put away in walk in freezer or cooler:

-High temp dishwasher noted in Willow room servery unable to get hotter than 65 C during inspection.
-No dishwasher temp log available

HADDON -RS Special cleaner being used in Willow servery as dining room table and food contact surface cleaner. This product appears to be used in the main kitchen as a floor cleaner. HADDON Pan Dazzle is used as all purpose cleaner.
Corrective Action(s): 1.Ensure all high temperature dishwashers are able to reach 71 C or higher at the plate and 82 C or higher at the gauge to properly sanitize dishes. Dishware requires proper sanitizing step. If unit cannot reach 71 or higher then dishes must be washed and sanitized in main kitchen mechanical high temp dishwasher.
Until dishwasher is functioning properly in Willow room servery a sign must be posted: "out of order - dishes must be cleaned in main kitchen"

2. Cleaning (green) and sanitizing (red) buckets noted through out facility, some with labels and other not labeled. Some labeled cleaning buckets have EcoLabs orange cleaning product labels.
Corrective Action(s): 1. Ensure all chemical cleaners and sanitizers are being used for their intended purpose. The use of chemicals must be standardized through out facility and staff must be trained on each products use. Replace the floor cleaner for all purpose cleaner.
2. Ensure all chemical containers are properly labeled with its contents as not to confuse staff of the product and its intended use. Re-label or label all chemical containers.

Aspen Grove:

- Mouse droppings and 2 mouse snap traps noted in corner behind counter under window (*Violation noted above)

Maple Lane:
1. Ice cream freezer: -18 deg. C.
2. Cooler: 3.2 deg.C.

Cranberry Cottage:
