Servery kitchen attached to main kitchen has cold holding units, all at 4 deg C or less
High temperature dishwashers in main kitchen and in attached servery were >71 deg C at plate level after rinse cycle
FOODSAFE certified staff on site
Quat sanitizer in rag buckets at 200 ppm QUATS (multiple throughout kitchen)
