Observation:
High temperature dishwasher has accumulation of caked-on debris and organic waste on top propellers and inside doors.
Corrective Action(s):
Clean and sanitize inside of dishwasher. Ensure inside of dishwasher is cleaned and sanitized at least every month. To be corrected today.

Routine Inspection (Main Kitchen):
All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
All freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit).
QUAT sanitizer in buckets and dispenser = 200 ppm.
High temperature dishwasher sanitizing with 78.1 degrees Celsius at plate level after final rinse cycle.
General food storage practices good at the time of inspection:
- All food items covered and protected from contamination.
- All food items stored at least 6 inches off the floor.
- Dry storage room organized.
All food processing equipment, utensils and dishes maintained in a sanitary condition.
Ice machine clean. Ice scoops stored in designated container.
Premises well lit.
Pest control in place.
No indication of any pest activity at the time of inspection.
Overall cleanliness and maintenance (except dishwasher - see violation code 301) satisfactory.
General hygiene of staff very good. Staff wear hair nets and were observed to wash hands frequently at the time of inspection.

Follow up inspection to be conducted on Monday September 16, 2019 to check dishwasher cleaning and inspection of serveries.
