Sanitation is good. Refrigeration measures < 4 C, with the noted exceptions. Freezer temperatures measure < -18 C. Dishwasher final rinse residual measures 100 ppm Cl. Wiping cloth sanitizer and spray sanitizer each measure 200 ppm Cl. Premises complies with the Transfat regulation. No recommendations.
