Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No sanitizer detected- bucket of sanitizer was almost empty it is changed primed but still nothing
Correction: -All washed dishware including all bins and inserts to be soaked in bleach solution in the sink for 2 minute and air dry
-Dishwasher can be used for washing but sanitizing must be done manually as noted above until the dishwasher is either fixed or replaced and checked

The following to be completed : .

- Seal gaps under walk in cooler door and address all structural issues contributing to entry and harboring of rodent
- Continue storing all foods in soft packaging , clean dishware, utensils and take out containers in sealed bins
- Ensure to fill out sanitizer bucket from dispenser ( follow the direction) concentration to be checked with test strip - 200 ppm
-Clean drains - noted some fruit flies in dry storage room and bar

As we discussed ensure to clean and sanitize the facility before closing and protect all clean dishware, equipment by covering them properly - upon opening sanitize all work areas and counters before any food handling.

Facility is open subject to addressing and following the above.
