Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (1) No sanitizer available in kitchen. Sanitizer spray available at sushi bar >>200ppm. Two bottles of 100-200ppm bleach prepared at this time.
2) High temperature dishwasher not achieving minimum final rinse temperature. Operator had contacted the technician. Facility has 2 two compartment sinks + 1 prep sink.)

Follow-up inspection conducted:

CODE 308 corrected and in compliance.
CODE 302 corrected and in compliance.

-High temperature dishwasher replaced. Achieved 73.7'C at the plate level at final rinse.
-Ice filled in containers storing scoops.

NOTE: Ensure all kitchen staff are aware of and using sanitizer after each possible contamination.
