Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: - Premises does not have hot water. Hot water at handwashing tap measured 21C. Hot water at dishwashing sink tap was 20C
Correction: - Repair or replace hot water tank so that it is able to supply hot water at sufficient temperature and capacity to meet the hot water needs for sanitary maintainenance of the food service establishment.
- Closure Order issued.
Comments

Follow up inspection to assess if requirements of Order have been met and premises may re-open:
- Hot water tank has been replaced with new, larger tank. Photo outlining specifications of new tank and service report/invoice from Plumber were submitted by Operator to confirm replacement.
- Hot water was available at dishwashing sinks and handwashing sinks for sanitary maintenance and handwashing. Temperature at tap (at dishwashing sink) measured 61C
- High temperature dishwasher was able to meet required sanitizing temperature consistently when run multiple times. Temperature at dish measured 76.6C, 76.7C, 77.1C with min/max thermometer.

As requirements of Order have been met, closure Order is now rescinded and food premises may re-open.

The following issues noted in routine inspection have also been address:
- Line cooler has been repaired and was at 4C. Continue to monitor to ensure temperature of unit remains at 4C or colder.
- Designated container present for sanitary storage of ice scoop
- Areas where mouse droppings were noted have been cleaned
- Excess items in back storage area have been removed. Floor is clear to facilitate cleaning and monitoring. Continue to monitor for rodent activity. Ensure any additional droppings are cleaned up.
