Follow up to Rpt # 236355.

- Discussed cooling procedures with operator. Items that had been cooled in the walk in cooler were probed at an internal food temperature of 4 to 5 degrees C at the time of inspection. Two signs (bilingual) are posted within the kitchen that explain proper cooling procedures.
- A digital minimum / maximum registering probe thermometer is available on site
- Two additional hot holding units (bain-marie) are in place since the previous routine inspection. Hot holding internal food temperatures were measured at 60 degrees C or more. Reminder to ensure that unit is preheated to the correct temperature and food is fully reheated and/or cooked prior to adding food to the unit.
- Food observed to be protected from contamination at the time of inspection and walk in cooler has been reorganized. Raw meats and shell eggs were not observed to be stored above ready-to-eat foods, such as salad ingredients. No opened canned foods observed at time of inspection.
- Operator stated that raw meats are now thawed on the bottom shelf of the walk in cooler. No improper thawing observed at time of inspection.
- Three compartment sink was fully set up for manual ware washing. 1st compartment: detergent and water, 2nd compartment: rinse water, 3rd compartment: bleach water sanitizer at 100 ppm chlorine. Operator has ordered chlorine test strips (invoice observed at time of inspection).
- Chemicals, cleansers, and similar agents observed to be labeled.
- No reusable utensils / dishware that are intended for customer use were observed at the time of inspection. Tables are set up with disposable utensils / dishware.
- Operator has provided specifications for dishwasher. Reminder to provide additional requested information and contact the Environmental Health Officer for inspection prior to use of the dishwasher. Changes to layout, equipment, operations are subject to new health approval.
