Observation (CORRECTED DURING INSPECTION): Wiping rags stored directly on food contact surface in the back kitchen and front sushi bar area. Wiping rags need to be stored in a sanitizing solution to prevent the growth of bacteria. Using a sanitizer spray solution is inadequate to prevent the growth of bacteria on the wiping rags.
Staff member was washing and rinsing food containers with soap and detergent. A sanitizing step is require for all food equipment after they have been washed and rinse. 1 compartment of the 2 compartment sink was filled with a 100ppm chlorine solution at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Food handler was using gloves to batter tempura and then rinsing the hands in a bucket of water with the gloves on. Hands cannot be washed in a bucket of water and gloves need to be replaced.

Routine inspection conducted and the following were noted.
All cooler units less than equal to 4C and equipped with thermometers.
Freezer units at -18C.
Hand washing stations satisfactory.
Food items stored at least 6 inches off the ground.
No pest activity noted.
