Observation (CORRECTED DURING INSPECTION): Fresh noodle dough (30 sheet container) kept in room temperature measuring at 14C. Operator reports it was taken out of the walk in cooler 1 hour prior.
Corrective Action(s): Operator relocated noodle dough back into the cooler at the time of inspection. Only take out small number of sheets to keep them soft.

Observation (CORRECTED DURING INSPECTION): Black Bean paste measured to be at 50C at the time of inspection.
Corrective Action(s): Hot holding units must be kept at 60C or higher. Operator reports the black bean sauce has been in the hot holding unit since morning. Operator discarded black bean sauce.

2) Rice scoop kept in warm water bath
Corrective Action(s): 1) Operator relocated raw shrimps at the time of inspection. Do not keep raw proteins above ready to eat products.
2) Rice scoop moved to dishwasher at the time of inspection. Ensure to keep kitchen utensils in ice water or dry conditions only.
