Observation (CORRECTED DURING INSPECTION): Manual vegetable slicer was found to have food debris behind the blade.
Corrective Action(s): Ensure slicer is disassembled for cleaning and sanitizing. Slicer was cleaned and sanitized at the time of inspection.

Observation: Food was stored on the floor in the walk-in freezer.
Corrective Action(s): Ensure foods are stored off the floor and protected from potential contamination and to facilitate cleaning. Boxes can be placed on top of plastic crates.

Comments

-Sushi prep cooler was at 4C (top and bottom).
-Under counter cooler was at 3C.
-Front display cooler was at 4C.
-Walk-in freezer shared with the store was at -17C.
-Temperatures checked and recorded daily.
-Sushi rice had a pH of 4.0. Sushi rice pH checked and recorded daily and pH probes calibrated daily.
-High temperature dishwasher had a final rinse temperature of 76C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed practicing good hand hygiene practices at the time of inspection.
-Quats sanitizer pail was tested at 200ppm. Quats sanitizer dispenser was at 200ppm.
-Sushi prep surface sanitized every 15 minutes.
-Facility is currently serviced by a professional pest control operator.
-No signs of pests noted at the time of inspection. Tin cats did not have any signs of pests.
-General sanitation good at the time of inspection.
-FOODSAFE Level 1 valid until March 24, 2023.
