Observation: Light bulb initially turned on inside the walk-in-freezer, however subsequently did not turn on during the inspection. Staff mentioned that the light bulb turns on automatically however does not always work on a consistent basis when the walk-in-freezer is used.
Corrective Action(s): Please make the necessary repairs to ensure that sufficient light is available inside the walk-in-freezer during periods of use; Correct as soon as possible within a month and provide the district Environmental Health Officer an update.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Upright cooler containing milk lacked a thermometer inside it.
Corrective Action(s): Ensure the upright cooler is equipped with an accurate thermometer to monitor that it maintains a temperature at or below 4 degrees C; Correct within 1 week.

Observation: In Operator's absence, no staff on duty had valid FOODSAFE Level 1 or equivalent course training.
Corrective Action(s): Please ensure that at least one staff member on duty in the absence of the Operator has valid FOODSAFE Level 1/equivalent course training. Please have enough staff enroll and complete a FOODSAFE Level 1/equivalent course to fulfill this requirement; Correct within 1 month and provide an update to the district Environmental Health Officer of Fraser Health. Comments

Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
3-compartment sink was supplied with hot and cold running water. Manual ware-washing (wash, rinse, sanitize, and air dry method) was reviewed.
200 ppm QUATS sanitizer was available in the sanitizer pails and from the dispenser at the 3-compartment sink.
Prep. sink was operational.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Walk-in-freezer and other freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
Time-stamps were in place for condiments held at ambient temperature.
Probe thermometer was available.
Food storage areas were clean and organized.
Food was covered in storage areas.
No signs of recent pest activity were observed at the time of inspection.

Note: Staff were unaware if test strips for Peroxide multi surface disinfectant and cleaner and Quaternary ammonium compounds sanitizer are available on-site. Please ensure test strips are available to monitor the concentration of the QUATS sanitizer and hydrogen peroxide cleaner disinfectant; Correct as soon as possible within 1 week.
