Comments

Kitchen:
General sanitation is acceptable but need to be improved (see violation sections).
- Kitchen handsink supplied with liquid hand soap,single use paper towels, hot/cold running water.
All cold units meet requirements:
- Thermometers for cold units - available.
- Prep cooler across cooking line at 3.5 deg C.
- Counter top cooler at 3.6 deg C.
- Upright cooler at 3.4 deg C.
- Walk in cooler: 4 deg C.
- Walk in freezer: -19.9 deg C.
- Glass door cooler: 3.6 deg C.
- Low temperature dishwasher at 100ppm. Test strips are available.
-Ice-maker - satisfactory.

Bar:
- Sanitation - satisfactory.
- Hand sink supplied with liquid hand soap, hot/cold running water.
- All coolers <=4.0 deg C.

Recommendation:
- Ensure that an ice scoop stored in a sanitary manner.
- Organize dry storage storage as well as coolers.
- Do not double stack food in coolers if bottom one is not covered.
