Observation (CORRECTED DURING INSPECTION): The following items were observed within the expo cooler (upper portion where inserts are located):
1. Half a food insert of coleslaw (9-10 degrees C internal)
2. Half a food insert of cut carrots in water (11-12 degrees C internal)
3. A small amount of sour cream in a small food insert (13 degrees C internal)
It was stated that items were placed into cooler this morning (greater than 4 hours prior). Ambient temperature of expo cooler measured 4 degrees C and food item located in lower section was probed at an internal temperature of 3 degrees C.
Corrective Action(s): Above-noted items were discarded by staff. Do not use upper section of this cooler as it does not appear to be maintaining potentially hazardous food at required internal temperatures of 4 degrees C or less. Have cooler serviced as needed and contact the Environmental Health Officer prior to using the upper portion of this cooler for storage of food. Ensure cold potentially hazardous foods are maintained at 4 degrees C or less to limit the growth of potential pathogens and/or toxins.

Follow up to Rpt # MBEK-B6YVGB.

- Quaternary ammonium compounds (quats) sanitizer available in buckets at 200 ppm quats. Wiping cloths stored within sanitizer.
- All hand washing stations were observed to be unobstructed and supplied with hot and cold (or warm - mixed valve) running water, liquid hand soap, and single use paper towels.
- No potentially hazardous foods observed to be at ambient temperature
- Blender machine located in bar area has been replaced with a new unit (including new blades) -- excellent condition
- No liquid observed at bottom of pantry cooler; however, a pool of clear liquid was observed in expo cooler. Ensure that this liquid is removed from this cooler. Staff stated that liquid is to be cleaned before the end of today. No food items directly in contact with liquid--few food items stored in expo cooler (mostly packaged items). Ensure that cooler is serviced or repaired if problem is not rectified.
