- Handwash stations (except the one previously mentioned) were supplied and maintained with hot/cold running water, paper towel and liquis soap
- Sanitizer in bucket was detected at >200ppm chlorine. Advised operator that sanitizer can be reduced to 100-200ppm
- High-temperature dishwasher final rinse was 77.8C
- All cooler units were 4C or less
- All freezer units were -18C or less
- Hot held foods were above 60C
- Food contact surfaces were maintained
- Ensure potential hazardous foods, such as cooked rice is not stored at room temperature for more than 2 hrs. They must be consumed/discarded within 2hrs at room temperature.
