Routine inspection conducted at the facility kitchen.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler noted at 1.3C
- Walk in freezer at -17C
- Stand up cooler at 4C
- Fridge in common room at 4C
- Temperature logs were maintained and found up-to-date. Good.

Storage:
- All food products were stored at least 6" off the floor.
- All food products were found either in original packaging or properly covered inside coolers.
- Pest proof bins used for dry storage.
- Both dry storage rooms (small with office and main storage room) were well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash sinks (x2) were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- 2 prep sinks available. Staff stated that sink is sanitized with 200ppm QUATS after raw meat is handled in it. Good
- 200ppm QUATS sanitizer pail available.
- Sanitizer dispenser releases 200 ppm QUATS.
- 3-compartment sink available.
- High temp mechanical dishwasher used for dishwashing and reached 71C at dish surface during rinse cycle.
- Ice machine was found in good sanitary condition and ice scoop was stored outside in a sanitary manner.
- Vents were serviced in April 2022.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.
