High temperature dishwasher maximum temperature reached at utensil surface during inspection: 55 degrees C.
Adequate hot water available at start of inspection; however, over several minutes, hot water temperature at faucets decreases to approximately 37 degrees C. It was stated by the owner that one of two available hot water tanks may not be functioning properly at this time.
Note: Technician arrived on site at the time of inspection to correct hot water issue. Hot water temperature was measured at 54 degrees C (faucet) and for the high temperature dishwasher, 81 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at the utensil surface). Dishwasher achieved greater than 71 degrees C at the utensil surface for multiple cycles.
The following has been corrected from the previous inspection:
Display cooler at 4 degrees C
Ice machine in sanitary condition.
Hand washing station noted in previous report has hot and cold running water, liquid hand soap, and single use paper towels. Hand washing sinks are unobstructed. Leaks are no longer present.
