Follow up inspection:
-Walk-in-cooler was at or below 4 degrees C (measured between 1-2 degrees C) at the time of inspection. Walk-in-cooler was equipped with a built thermometer and had two thermometers inside it.
Operator stated walk-in-cooler had returned to a temperature at or below 4 degrees C on July 2, 2021, however then it increased above 4 degrees C again for a short period of time. Operator was unsure when the walk-in-cooler undergoes a defrost cycle. Operator stated they had a technician re-service the walk-in-cooler to increase the level of coolant.
Ensure refrigeration temperatures are monitored upon opening the food service establishment each day and regularly (every two hours) throughout the period of operation in accordance with the food safety plan. Maintain written record/log of refrigeration temperatures. It was discussed that templates for refrigeration and freezer logs are available on the FOODSAFE.ca website.
-Ceiling tiles above the cooking equipment/pizza oven had been cleaned.
