Observation (CORRECTED DURING INSPECTION): Observation: As per the probe thermometer, food in prep cooler was measured as following:
- Tomato sauce = 5.4C
Pepporoni = 7.4C
- Sliced Ham = 6.8C
- Chicken Wings = 7.3C
- diced tomatoes = 7.6C
- Shredded cheese = 7.8C
Corrective Action: Move all potentially hazardous food items to walk-in cooler. Do not store any potentially hazardous food in the prep cooler until the cooler is serviced, and temperature monitored to ensure that it can hold 4C or below.

Observation (CORRECTED DURING INSPECTION): Observation: Observed a tong stored in a bucket of chicken wings in a prep cooler, and a scoop stored in a container of shredded cheese.
Corrective Action: Remove all utensils out of food containers and store it in a dry and clean environment.

Observation: Observation: Prep cooler was measured to be 7.6C (left side) and 6.3C (right side). After 30 min, the cooler was measured again at 7.7C (left side) and 6.7C (right side). Temperature log 3hrs ago indicated 40F(4C). Existing thermometers in the prep. cooler measured the same temperature as the probe thermometer. (+/- 1C)
Corrective Action: Monitor the temperature to ensure that the cooler is capable of holding 4C or below. If the temperature does not improve, have the cooler serviced in a manner that can hold temp. of 4C or below. In the meantime, do not store any potentially hazardous food in this prep cooler.
