Observation (CORRECTED DURING INSPECTION): Meat sauce and yogurt stored in sliding glass-door cooler at 19C.
Corrective Action(s): Both were discarded at time of inspection. All cold potentially hazardous food items must be held at 4C or colder. Cooler to be repaired.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - Old food debris found behind blade guard of meat slicer.
- Old food debris also found on blades of vegetable slicer.
- Clean dishes (pizza pans, cutting boards, food containers, etc.) were stored behind 3-compartment faucet and in sanitizing sink.
Corrective Action(s): - Disassemble the meat slicer and the vegetable slicer, and thoroughly clean and sanitize all parts prior to using.
- Clean dishes must be stored in a manner to prevent potential contamination (such as splashing from dirty dish water). Install more racks on the wall if necessary.

Observation: Sliding glass-door cooler was measured to be at 19C.
Corrective Action(s): Staff stated they adjusted the cooler temperature, as food was frozen in the morning.
Repair cooler such that it is capable of maintaining temperatures of 4C or colder.
Meat sauce and yogurt discarded at time of inspection. Bottles of soda and sauces were not discarded.
Do not store any potentially hazardous food items in this cooler until it is capable of maintaining temperatures of 4C or colder.
Correct by: 1 week.

Observation: Countertop deep fryer and induction stove were found on the prep counter and had been in use.
Both pieces of equipment have not been approved for use at this facility, as there is no ventilation canopy other than for the pizza oven.
Corrective Action(s): Remove deep fryer and induction stove from facility. A new ventilation system will need to be installed if you wish to use the deep fryer and induction stove.
Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Employee onsite did not have FOODSAFE Level 1.
Corrective Action(s): Operator arrived in the middle of this inspection. Ensure that when the operator is not onsite, at least one employee onsite has their FOODSAFE Level 1 certification.

- Bleach sanitizer solution available in spray bottles at 100ppm
- Walk-in cooler and prep coolers were measured at 4C or colder.
- Freezers were satisfactory
- Hot-holding unit for pizza slices was measured at 68C.
- Three-compartment sink maintained in sanitary condition.
- Food storage practices satisfactory.
- No signs of pest activity noted at time of inspection.
