Observation: Mouse droppings and gnawed/shredded materials noted on floor in the following areas:
-under shelving near and in pop storage room
-along wall and especially in corner near dry storage/chest freezer area
-by CO2 tanks
Corrective Action(s): -Thoroughly clean up all droppings and shredded materials in areas noted above. Sanitize areas.
-Contact Pest Control and take action according to recommendations given. Submit report to the undersigned. (business card provided). Staff on duty reported Pest Control Technician is on-site twice per week.
-Seal up any holes that are identified. Keep floor area clear to prevent hiding places/harbourage areas and to facilitate monitoring and cleaning.
-Continue to monitor for further activity and clean up droppings if any additional noted.

Comments

-General sanitation is satisfactory although dust accumulation noted above pizza oven area which needs to be cleaned.
-Handsink supplied with liquid soap and paper towel in dispensers
-Prep cooler was at 1-2C
-Walk-in cooler was 2C
-Walk-in freezer was at -11C
-Chest freezer was -13C
-Pop cooler was at 4C
-Pizza being held at <60C however time tracking is in place. Pizza is discarded after 2 hours.
-Both staff members on duty have completed Foodsafe level 1 training.
-Bleach sanitizer solution (100ppm Chlorine) present in spray bottle and dishwashing sink for sanitizing food contact surfaces and dishes.
