304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed on floor underneath storage units placed in front of walk-ins and undercounter shelf by the ice cream stand-up freezer. Professional pest control company contracted- Orkins. Traps in place. Holes/cracks observed on baseboards/door gap of walk-ins filled.
Corrective Action(s): Ensure to have all droppings removed and affected areas sanitized before initiating any food prep in the morning. Copy of the recent pest control reports to be emailed to the health inspector.

Observation: General sanitation of the facility satisfactory throughout. However, a couple areas require better/more frequent cleaning as discussed at this time- cook line at front/floors underneath large cooking equipment. Rodent droppings observed on floor underneath storage units placed in front of walk-ins and undercounter shelf by the ice cream stand-up freezer.
Corrective Action(s): Ensure to have all floors/storage shelves cleaned on a daily basis as agreed at this time.

Comments

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
NOTE: One of the salad coolers had top inserts operating at 6'C. Ensure to keep the lids closed at all times during operation.
- High temperature dishwasher achieved 72.8'C at the plate level after final rinse.
- 200ppm Quats available in labelled spray bottles. Sanitizer buckets were filled at the time of the inspection.
- General food storage practice is very good throughout.
- Ice machine satisfactory. Scoops stored in proper manner.
- Ice cream freezer and dipper well no longer in use. Do not store any tools/scoops in this area.
- Glasswasher achieved 12.5ppm iodine after final rinse.
- Upstairs bar used for private events only. No concerns observed at this time.
- Womens washroom handsinks properly equipped.
