Comments

-Kitchen is used minimally for food preparation.
-Upright cooler was at 4C.
-Chest freezers were at -20C and -23C.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Kitchen also has a domestic residential NSF certified dishwasher.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle labelled and tested at 200ppm.
-Deli slicer was found to be clean and sanitary. Slicer was disassembled for cleaning and sanitizing.
-Minimal amounts of foods stored on-site.
-General sanitation satisfactory at the time of inspection.
-Minor rodent activity observed in the storage area. Facility is currently serviced by a professional pest control operator. Continue to clean and sanitize affected areas and monitor for pest activity. Ensure foods are stored in pest proof containers, facility is maintained in a clean and sanitary condition, waste is removed regularly, and entry points are sealed.
-FOODSAFE Level 1 individual present when kitchen is used for preparation of potentially hazardous foods, which are intended for immediate consumption.
