soaking noodles stored in walkin cooler. soaking noodles used for immediate preparation stored with ice by grill. cooked products maintained in warming unit display or on active burners on the stove top. take out sauce containers stored with fitted lids spices stored in new plastic bins with fitted lids. take out containers stored upside down to protect from contamination. rice spatulas stored in ice filled containers. wiping rags stored in dilute bleach sanitizer. food utensils observed in sanitary condition. kitchen and storage room cleaning completed. staff observed following proper handwashing technique. Discussed Food Safety Plan with operator. Cooked spring rolls are to be received in clean food grade containers - not papertowel lined milk crates Cooling procedures will be limited to beef cuts only. All other menu items will be prepared on a cook / hot hold / discard manner only. Cooling record sheet reviewed to be used for cooling beef portions.
