Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating/below -18'C.
- Thermometers available for temperature monitoring.
- Hot-holding units operating above 60'C.
- 200ppm chlorine solution available in buckets to hold wiping rags and spray bottle.
NOTE: Ensure to add 1/2 tsp of bleach per 1L of water to prepare the correct concentration.
- High temperature dishwasher achieved 74.3'C at the plate level after final rinse.
- General food storage practice satisfactory.
- pH of sushi rice measured <4.2
- Ice machine satisfactory.
- Foods obtained from approved sources.
- Professional pest control company contracted.
- No evidence of pest activity observed at this time.

NOTE: Ensure to have the backdoor closed at all times.

General maintenance and sanitation level had improved from the last routine inspection. Keep up the good work!
