Observation: - Damaged flooring tiles noted in dishwashing area under drainboard. This was noted on previous inspection report and has not been addressed.
Corrective Action(s): - Repair/replace flooring tiles in areas noted above so that floor remains in good repair with a smooth, washable finish.

Observation: - Operator not present and staff present have not completed Foodsafe level 1 (or equivalent). In Operator's absence, there must be at least one staff member present who has Foodsafe level 1 certificate (or equivalent).
Corrective Action(s): - Ensure that there are an adequate number of staff who have completed Foodsafe level 1 (or equivalent) so that above requirement is met.

Comments

- Premises and equipment maintained in sanitary condition.
- Handsink supplied with hot and cold water, liquid soap and paper towel.
- Noted frequent handwashing by foodhandling staff. Gloves worn for direct food contact and changed at appropriate frequency.
- Coolers were operating at required temperatures (4C or colder):
- Walk-in cooler 4C
- Sandwich line coolers 4C (veggie side) 4C (meat/protein side)
- 2 door cooler 4C
- Beverage cooler 3C
- Walk-in freezer -17C
- Hot potentially hazardous foods held at 60C or higher:
- Soup 67C, 73C
- Meatballs 63C
- Cold holding and hot holding temperatures monitored and recorded. Records present and up to date.
- Quats sanitizer (200pm) present from dispenser at 3 compartment sink, in spray bottle, and bucket with in use wiping cloth.
- Staff knowledgeable about manual dishwashing procedures. Plugs present for sink compartments for sinks to be filled.
- Dry storage area organized with all food items stored on shelving.
- No signs of pest infestation noted at time of the inspection.
- Staff/public washrooms maintained with hot/cold running water, liquid soap and hand dryers.
